The default settings have automatic transmission. Turn it off. Go to settings > Controls > Manual + Clutch. It will be agonizing for the first hour. However, manual transmission allows for "engine braking" (slowing down without using the brake pedal) and faster acceleration out of corners. In multiplayer races, manual drivers always beat automatic drivers.
